I was wondering if anyone else makes things from scratch around here.
I myself make my own jerky, brew wine and bake bread from scratch.
Does anyone else have these hobbies...

I make lots of homemade stuff, but a lot of what I make is Puerto Rican.... I make my own sofrito (a condiment that goes into your cooking), I make my own mojo criollo (a condiment made of garlic among other things to go on top of food), I cook with fresh produce and meat a lot, so I pretty much cook homemade food every day, although sometimes I do use things that come from a can. Sofrito and mojo criollo I make a lot at once and then I freeze it all, it lasts me about a month.
I got a food dehydrator this summer, though, and I would like to make my own beef jerky... I just haven't gotten around to it.

I make jerky about once a month and it last most of that month. Can make a good amount of $ selling it around here too.

I used to make jerky all the time but i never did get really good at it. Never came out really tender like Pemican style.
Maybe you can PM me some pointers.

I really like making Garlic butter bread. It is so good when it first comes out of the oven.

I make at least one loaf of whole wheat per week. Usually two. Once in a great while I'll do a 58 min. white bread recipe. That requires a ton of yeast and sugar (in my opinion) so I try to save that for when I need to take something somewhere and I don't have a lot of time. It tastes better than the whole wheat stuff but then so does a handful of M&Ms. (My husband has done pizza crust in the bread machine a couple of times. That was pretty good.)
I have an Oster that does 1.5 - 2.0 pound loaves. I find it's a waste of time to do the smaller recipe. Our family loves homemade bread, so the extra half pound never goes to waste. (Unless we have the stomach flu!!!)
I love to bake pretty much anything from scratch that doesn't require hours and hours of kneeding. It's such a let down to spend all that time and energy only to have it eaten and forgotten in 10 minutes.
Day to day cooking, otoh, is a trial to me unless my kids are helping me. At least that way there's something redeeming about it.

I like making my own pasta. I've only done it once but I just bought stuff to do it again. Whole wheat pasta tastes a lot better to me now than it did when I was little. =]
I prefer making my own food because I can know more of what's going into it, although I'm lazy so it doesn't happen enough. I have plans in the making for raising my own vegetables year round, too, so that if I can actually successfully convert my diet to mostly rawfood veganism I'll almost always know what's in my food.

While I haven't done it in awhile, I can and have made homemade bread ... the old fashioned way :smile: with no machine save the stove
I used to make nearly everything from scratch ... if I ever find some spare time again, I'll go back to it again. I love homemade cooking and baking.

I think it's theraputic to have the option of expending energy where it's actually needed.

I got a make your own BBQ suace kit for Christmas. I also bought a make your own salsa kit as well. I think this next year is going to be fun going back to basics time....

My Dad got a beef jerky kit for Christmas. Have you ever used a kit for that, NSM? If so, how'd it turn out?
The kits are real easy. Is he using a dehydrator (sp). If so tell him to put a sponge in the bottom that is damp and check it every two hours or so. It helps to keep the meat from drying out way to fast before the heat cures it. If he likes tell him to add some garlic juice or lime juice to the sponge for some extra flavor. Using the kits with a regular oven can be a little tricky. Just make sure to pat the grease off once in awhile.

I do not have a bread machine.... but I will make my own bread. Here is an easy recipe for as close as possible to a crusty baguette of french bread. Just be prepared to work that dough with all your heart!
One package of yeast ( let the yeast rise first in a few ounces of WARM water)
200 grs of flour (preferably the high gluten type especialy for bread)
Salt (to your taste)
One cup of warm water.
Mix all ingredients and work the dough for a good 15 minutes until it is homogenous and "rubber like". If it is too sticky just add more flour until you get the right "rubber like" Place it in a deep bowl previously oiled and cover with a wet clothe. Leave it to rise for about two hours in a warm location.
Take your ball of dough and roll it out on a ligthly floured flat surface. Then roll up the dough in the shape of a loaf as tight as possible. Let it rise again for about two hours.
Prior to baking it at 350 F for about 20 minutes, brush icy cold water on the top of the loaf and immediatly put into the oven. Check your bread at 15 minutes as some ovens bake faster than others.Let it cool off on a rack so it does not "collapse".
If you have some left over dough...... fry it in small donut shapes. It is yummy.

euh.... (french version of uh....).... let me see. How about a half tea spoon or so. The best bet is as you have added all your ingredients, you taste a bit of your dough. It is still wet enough that you can blend in more salt if you wish.
I have an idea.... if your homeschool curriculum has french in it, you can recruit kiddies to help make the bread and just sit back and relax.( a method of well utilized conserved energy heheheh)
They will need to learn that:
Flour is LA FARINE (fareen)
Water is L'EAU ( lo)
Yeast is LA LEVURE ( levur)
Salt is LE SEL (sale)
Bread is LE PAIN (pan)
and MIAM MIAM goes for yummy!

Thank you for the French words and their pronunciations, Veronique. The boys love all things related to geography as well as creating in the kitchen! I never gave the kneading a thought but that would be a great energy expender for them.

I started another batch of wine on the first.
Also tried the salsa thing. It came out green/brown. I need to reduce the amount of peppers I think... :hrm:
I plan on making the BBQ sauce this monday.
Some Jerky would be good about now....
