I need a recipe for sweet potatos that is like baked and mashed with cinamon and stuff.

2 c. sweet potatoes, cooked & mashed
1 c. non-fat milk
2 eggs, beaten
1/2 c. sugar
1/2 tsp nutmeg & cinnamon
1/2 stick butter, melted
mix & bake in greased casserole dish for 20 minutes @ 400 deg.
Remove & add topping:
3/4 c. bran flakes, crushed
1/2 c. brown sugar
1/2 c. chopped walnuts
1/2 stick butter, melted
add topping & bake for another 10 minutes.

c. is cup(s)
tsp (or small t) is teaspoon (measuring, not the kind you use for a cup of coffee, that isn't the same measure)
Tbl (or cap T) is Tablespoon (ditto)
substitute mini-marshmallows for that topping for a dessert-sweet casserole ... add when the casserole is nearly done, then bake a bit more until the marshmallows are golden brown on top ... but not burnt
(Pecans are good instead of walnuts too)

Here's another one that is sorta different:
TROPICAL YAM BAKE
2 cans (18 oz. ea.) yams or sweet potatoes
2 eggs
1/2c. firmly packed light brown sugar
1/4c. orange juice
3 Tbsp. oil (vegetable oil)
1 1/2 tsp. grated lime peel
2 Tbsp. lime juice
1/2 tsp. nutmeg
2 bananas, peeled and diced
grated lime peel
1. Heat oven to 350. Oil an 11 3/4 X 7 1/2 in. baking dish
2. Combine yams, eggs, brown sugar, orange juice, oil, 1 1/2 tsp grated lime peel, lime juice, and nutmeg in a large bowl. Beat at low speed of electric mixer until blended. Increase speed to medium. Beat until well blended.
3. Fold in bananas with a spoon, transfer to baking dish. Cover dish with foil.
4.Bake at 350 for 20 minutes. Remove foil. Bake another 10 minutes. Sprinkle with additional lime peel.

And if you are into soul food, here's a sweet potato pie recipe:
BETHUNE SWEET POTATO PIE
3 unbaked 9-in. Crisco single crusts
9 medium sweet potatoes or yams (about 4 lbs.)
1/4c. margarine, softened
1/2c. granulated sugar
1/2c. firmly packed light brown sugar
1/2 tsp. salt
1/4 tsp. nutmeg
2 eggs, well beaten
2 egg whites
2 c. milk
1 Tbsp. vanilla
1. For filling, boil sweet potatoes til tender. Peel and mash.
2. Heat oven to 350.
3. Combine margarine, sugar, brown sugar, salt and nutmeg in large bowl. Beat at med. speed of electric mixer until creamy. Beat in sweet potatoes, until well mixed. Beat in eggs and egg whites. Beat in milk and vanilla slowly. Spoon into 3 unbaked pie shells, usuing about 4 cups filling per shell.
4. Bake at 350 for 50-60 minutes or until set. Cool to room temperature before serving. Refrigerate leftover pie.

Whatever you do, add some vanilla extract. Trust me. Yes, even if you use the recipe with citrus in it. (Most people don't know vanilla goes wonderfully with citrus as well.)
Add it to the butter or whatever creamy stuff you're putting in the sweet potaters. That way, the extract will mix into the potatoes much more easily.

Here is one I found that sounded interesting:
You will never make sweet potatoes with those little marshmallows again. You will love the topping of pecans and brown sugar on this sweet potato casserole.
2 Cups Mashed Sweet Potatoes, (canned is fine)
2 teaspoon Real Vanilla Extract
3/4 Cup Sugar
1/2 teaspoon Salt
1/2 Cup Butter
1 teaspoon Flour
2 Eggs, beaten
1 Cup Pecans, chopped
2/3 Cup Butter
1/2 Cup Flour
1 Cup Packed Brown Sugar

Yeah ... the pecan topping is the bomb ... but the marshmallows are good too if you want sweet. I think I'll try the pecan topping this year :smile:

Are we talking the orange kind or the purple kind?
As for me, heck I always thought whoever made that sweet potato stuff just skinned it, put some marshmallows on it, and cooked it . I never knew about all these other ingredients :doh:

Yup, they even make candies and ice cream out of purple yams. And slushees.
But then, they also make those things out of red beans or green tea or other surprising ingredients. Red beans especially are commonly used in candies and ice cream.

Boy this site is full of surprises. I was surprised to see a recipe for sweet potato pie here at this site. My wife had lost her recipe for the sweet potato pie last year and surprise surprise -- . By the way how is it ? Is it an award winning recipe ? I was raised on sweet potato pie . There's nothing like it. Pumpkin comes close. Thanks.

If you're making a sweet potato mash, there's one easy way to turn this recipe from a good recipe to a Abso-fantastic recipe. Replace at least half of your milk with condensed milk.
You'll have people demanding to come back to your place.
Learnt this from my Virginian brother-in-law.
