View Full Version : Why is sushi safe?

As far as I know, fish is the only meat you can eat raw without worrying too much about becoming sick. Anyone know what the reason is for this?

Depends what you mean by raw. Carpaccio, for example, isn't cooked before its eaten.

Sushi-grade fish is of a much higher quality than what you find in most grocery stores. Fish do carry parasites and diseases that are dangerous. Sushi-grade fish is (hopefully) free of these dangers. Still, it's best to only buy sushi-grade fish from a reputable source. I get mine from a local sushi restarant, which has its fish flown in daily from various locations. And still, with all these precautions, there are some fish I will not eat raw. :no:

Sushi should only be eaten fresh. You shouldnt take away sushi then leave in the fridge for a few days and eat it again. Im pretty sure theres a certain type of cow meat you can eat raw like sushi. I had it in France, and its in korea its called Yook Hae i think. Its nice.

yeah beef I am pretty sure you can eat raw if you so desire :shrug: its apparently on of the safest meats to eat like you can leave it till it's just about off and cook it and still not get sick where as with chicken or pork you could die from it being just about off :shrug:

I love raw fish--I eat it several times a week. Raw beef (I've only ever had carpaccio) is not my thang--too bloody.

Sushi-grade fish is a special category.

Yook Hae means "raw meat", haha. Koreans are so direct with their language sometimes. I asked my students about it and they said it's delicious! :eww:

I think I'll stick with spicey tuna rolls. I draw the line at raw cow.



On another note, I dreamt about sushi last night, inspired I'm sure by this thread. I think I dream about Tweb more than I know. :ahem:

Steak tartar, it's ground beef with a bit of onion, egg, seasoning and few other bits. A bit like a raw high quality beef burger.

You can also have steak cooked blue, which is just a (high quality) steak cooked for an even shorter length of time than a rare steak. The middle of the steak should still be cold.

Ham can just be cured with salt before eating eg. prosciutto and serrano. There hams mainly originate from spain/italy and surrounding regions.

So apparently my thinking that fish is the only safely consumable raw meat was wrong. But, that doesn't make sense. I was always taught that raw meat can contain parasites and bacteria. Is this not true? Or is it that meat which is eaten raw is of a specific grade? But how is that possible? Don't all mammals, regardless of how clean they are, host parasites?

I used to consider sushi safe, and ate it quite a bit. I got food poisoning from a reputable sushi restaurant once, though, and after that I've been wary of it. It might be safer in general than other meats, but the risk is still there.

Any other meat you can completely forget about, though. I don't care if it is delicious, I take my meats well-done, thank you. And I won't eat squid at all. I got food poisoning from well done squid once. Weird, but true.
