I am not above using Jiffy Mix in a pinch, and it almost ALWAYS comes out fine. I especially like it when I use a duck egg instead of a chicken egg.
But they call them "corn muffins".

Got me reading through my recipe books. Anne McCaffrey's "Serve It Forth" has some amazing recipes; now I want to try "Death to the Enemies of the Revolution Chili".
