      I am not above using Jiffy Mix in a pinch, and it almost ALWAYS comes out fine. I especially like it when I use a duck egg instead of a chicken egg.

      But they call them "corn muffins".

            That would probably work - grease it or spray it with vegetable oil... I wonder if the "preheat it in the oven" thing would work with the glass skillet.

            • Got me reading through my recipe books. Anne McCaffrey's "Serve It Forth" has some amazing recipes; now I want to try "Death to the Enemies of the Revolution Chili". I even have a fresh habenero to use. I'll definitely need some cornbread to eat with it.
