My cornbread always crumble into pieces after I take it out of the oven.

Without knowing specifics, I can’t tell you for sure, but I’d guess it would have something to do with moisture and it’s drying out while cooking. Toothpicks can be useful for telling if something is cooked all the way or not. Just stick one through the center and remove once nothing sticks to it and remember that bake time and try it next time. Baked dishes are more sensitive to altitude, humidity, bake times and weather in general and you might have to fine tune bake temps and times a bit for your location.

I am not above using Jiffy Mix in a pinch, and it almost ALWAYS comes out fine. I especially like it when I use a duck egg instead of a chicken egg.

I like to use my old iron skillet, preheat it in the oven, then pour the cornbread batter in the hot skillet and bake... it makes a really nice crust, and keeps the cornbread from sticking to the pan.

I don't even have an iron skillet. I have a glass skillet, though, which I could use in the oven.

That would probably work - grease it or spray it with vegetable oil... I wonder if the "preheat it in the oven" thing would work with the glass skillet.

Got me reading through my recipe books. Anne McCaffrey's "Serve It Forth" has some amazing recipes; now I want to try "Death to the Enemies of the Revolution Chili". I even have a fresh habenero to use. I'll definitely need some cornbread to eat with it.
