      Houston, we have a problem.

      Notes to self:

      1. Do not close windows abruptly behind rising bread pans.
      2. Do not drop bread pan onto floor.


      On advice, I've rekneaded them into a single loaf and am going to let them try to rise again until midnight. At that point, it's going into the oven, no matter what it looks like.

      Should be educational, even if it's not edible.

      There is no lao tzu.

      True fact: the only decent quiche ever made in my home was by an honest-to-god gay ballet-dancer.

      It didn't really rise, and then again, it didn't really fail to rise. What we have here is a half-rearisen loaf. I turned the temperature down to about 325 and baked it for about an hour.

      It's incredibly dense, the color and flavor is closer to a rye bread, but the texture is much smoother. Despite all the angst, it turned out to be a very tasty loaf, though I'm not likely to try repeating the process that got me there. I'm pretty sure there's an easier way.

      I'm giving real consideration to trying this again tomorrow.
