Not sure if it's exactly what you're looking for but this one's a pretty good introduction:
Kaiser, Walter C., and Moises Silva. An Introduction to Biblical Hermeneutics: The Search for Meaning.Rev. ed. Grand Rapids, Mich.: Zondervan, 2007.

Hmmm cheers but I think I'm looking for something less Bible-orientated.

Just a book that's basically "Hey, I'm a historian. This is how history is done" and a book that's basically "Hey, I dig the science of textual criticism. Let me show you how we do it."

Hmmmm, no one's posted here in a while, but may I suggest McCullagh's "Justifying Historical Descriptions". Haven't read it yet, but I think it's a pretty good overview and argument for the historical realist position.

Then Morgoth turned upon Húrin, and he said: 'Fool, little among Men, and they are the least of all that speak! Have you seen the Valar, or measured the power of Manwë and Varda?
Do you know the reach of their thought? Or do you think, perhaps, that their thought is upon you, and that they may shield you from afar?'

'I know not,' said Húrin. 'Yet so it might be, if they willed. For the Elder King shall not be dethroned while Arda endures.'

Sooner or later you just figure out there are some guys who don't believe in God and they can prove He doesn't exist, and some other guys who can prove He does exist, and the argument stopped being about God a long time ago and now it's about who is smarter, and honestly, I don't care. ~ Don Miller Blue Like Jazz

Yeah, for a good introduction to textual criticism and its application to the New Testament, that's a great book. Plus, it's one where Ehrman is actually pretty scholarly in.

I don't agree with where Ehrman has ended up. He had a conception of what faith was supposed to be and it was wrong. Finding it wrong he assumed that all faith in God is wrong. The truth is that the answer to bad religion is not no religion, it's better religion. Having said that. Ehrman, even when he is wrong, is a top rate scholar. He just sometimes begins, where the question of faith is concerned, with a bad apriori.
