For the blood of Christ to covers us from death. Christ was stripped and pierced for our iniquity. The bitter herbs and salt repressing the anguish of man. The wine and bread representative of Christ and how we are to be in fellowship with him.

Well, partly because they weren't expecting the Messiah to come to die. They expected the King, not the Sacrifice.
And, they didn't have the Holy Spirit yet to enlighten them as we do. Don't forget, they were steeped from the time of their birth in the religious system that held them captive until the Lord came to free them.
We would likely have been no better than they.
