              The thing about being closed on Sunday might have been a legitimate concern, but the airport gave away that wasn't the real reason, so I'm fine with this decision

                Maybe if they were the only restaurant in the airport. But there are usually dozens of restaurants in an airport so one closing on Sunday wouldn't do anything but give the others more business.

                  In this case it probably wouldn't be relevant because somebody elsewhere said there are like 20 Starbucks in that airport. In a really small airport, maybe.

                  One of the strangest business decisions I've ever seen was putting a Chick Fil A in an NFL stadium in Atlanta, for obvious reasons.
