Home Economics 101

Welcome to the Home Ec Section. Matters of the family sometimes bring joy and other times bring grief. But it is never trivial: Family matters! Feel free to discuss topics such as the sanctity of marriage; the awesome responsibility of raising children; the struggles of communication problems; the grief of losing a loved one; or anything else that relates to the home and family. However, due to the more personal nature of this section, I ask that you would be especially thoughtful of the readers' feelings. My earnest hope and prayer is that the discussions in this section will help families grow in the love of Christ.

But remember, always play by the rules: here

  • The Old Black Cast Iron Skillet

OK, so I tried some of the new fancy schmancy non-stick teflon blah blah blah frying pans, and have been continually disappointed.

Last week I got out my good ol' Cast Iron Skillet.

Why did I EVER stop cooking with it?

    I'm in love.

I prefer iron skillets myself. I'm trying it on my Max Burton induction plate, and it's pretty good even with the hotter four inch center...

I sauteed some onions for my Chicken Gumbo, and they... the Cast Iron Skillet did them quickly and they looked so beautiful and were so sweet.

            Because they are heavy.

They're still the best ones to use. Those with this or that layer are no longer non-stick the moment they get even the smallest scratch.

I'm always still in trouble again

That's why I quit using them. When I had people staying with me, I finally hid all the metal utensils away becuase my guests insisted on using them on my non sticks

My mother actually gave me one of her old Cast Iron Frying Pans for Christmas.

                            Best. Present. Ever.

I remember using this pan when I was growing up (apparently, it's older than I am), loving every second of cooking with it. After breaking it out to cook some pork chops, it felt like catching up with an old friend.

Not a skillet! A corn bread wedge pan.
