Late shift isn't that bad. There is actually quite a lot of overlap with the early shift.

Someone opens the store, a few hours later someone else comes, and then the first person leaves a few hours before closing. We close at 8 PM.

Apparently, the stuff on the inside of the crisping sleeves is called a susceptor. It's often amde of ceramic and or aluminum flakes. Check the links and articles here. You might also consider starting a thead in Nat Sci.
