Am I missing something here?
Okay, I thought I'd just throw this out there and see what happens.
This is how I understand the Trinity:
1. There is only one God
2. Father, Son, and Holy Spirit are each called God; have the divine atributes; etc.
3. The one God is not a personality but a relational term. A sort of umbrella that describes the way each of the three persons share the same spiritual esscence(substantia, to use the Latin of the Creed) and interpenetrate one another. Three beings each sharing the same nature or "kind-ness".
Am I on the money here? Just wondering....the compass of existence held more than my text-books had revealed, more than I had ever dreamed of. In short I lost my superiority, and this, though I was not then aware of it, is the first step towards finding God.-A.J. Cronin

Alright. Let's look at this.
First off, I don't really like the word proof. I prefer to speak of strong evidence. I don't even have proof that other people have minds or that the universe didn't pop into existence five minutes ago with false memories in our heads and false food in our stomachs, etc. Still, I would be a fool to deny such.
Let's look at some passages where we find clues.
In Genesis 1, we find God saying "Let us make man in our image." I have not been convinced by the arguments that this is a plural of majesty.
In Genesis 18-19, we find an interesting exchange between Abraham and three visitors. At least one of them is always identified as the Lord. Genesis 19:24 in this passage speaks of the YHWH in Earth raining down fire from the YHWH in Heaven.
Throughout this, we have a character showing up called the Angel of the Lord. My article on tektonics about it can be found here. http://www.tektonics.org/guest/aotl.html
In frequent passages in the Mosaic writings also, we have the Lord speaking of the Lord. Exodus 24 for instance has the start of Moses being told "Come up to the Lord." (The rabbis wondered why it didn't say 'Come up to me' and came up with the idea of Metatron, an angel in whom God's name dwells.
In Isaiah 48:16, we have the Lord speaking, and then he says the Lord sent him, and then he says his Spirit has been sent as well.
In Daniel 7, we have the Son of Man figure coming up to the Ancient of Days (This is God the Father and not Mossy for clarification) and thrones being set in place. The Son of Man is worshipped and served by all the Earth.
In Zechariah 2, we are told the Lord will dwell in the midst of his people.
In Malachi 3, we are told that the Lord they are seeking will come to his temple.
In all of this, we have clues. I would suggest reading some on wisdom theology as well. Richard Bauckham's "God Crucified" is a good read in this area.

The question for me has always been: What limit's God to a Trinity?

It's fine to keep this going here. I would say that we see him as a Trinity because that is what he has revealed and it is best to not make conjectures about what we have no way of knowing. However, I do find interesting triune aspects in nature.
Time is past, present, and future.
Love is between the lover, beloved, and has the Spirit of love.
Truth consists of the knower, that which is known, and the relationship between the two.
Intercourse consists of the man, the woman, and the new life that emerges.
From where I stand, there is much tri-unity in creation and that leads me to ponder that the Trinity has been revealed in the most minute ways.

That is a unique way of looking at things, AP, at least to me. Although, I would question time, as time is really only ever now, the rest is in our memories and anticipation. Probably a physicist or philosopher might have a few things to say about that though.
There is also...birth, life , death. And I hope nobody finds offence in this, but there are also the pagan concepts of maid/mother/crone and the waxing/waning/new moons.
I'm not sure it really does justice to Gensius question, but it's an interesting direction to go.
