Home Economics 101

Welcome to the Home Ec Section. Matters of the family sometimes bring joy and other times bring grief. But it is never trivial: Family matters! Feel free to discuss topics such as the sanctity of marriage; the awesome responsibility of raising children; the struggles of communication problems; the grief of losing a loved one; or anything else that relates to the home and family. However, due to the more personal nature of this section, I ask that you would be especially thoughtful of the readers' feelings.         Try 50's-60's, according to my uncles; my grandmother evidently had a large collection of them. Salmon loaf was singled out for especial ire.

        ETA: I'm sort of intrigued by the ham and bananas hollandaise.

            Yuck. That pic reminded me of the films they showed of surgeries where they show the flesh cut and held apart with clamps or whutever...eeewwwwww.

                That Super Salad Loaf was from the 40s during WWII. Wow. Best Foods really contributed to the war effort.

                    Gelatin was used to make foods go further. One or two of these I've seen in an old Better Homes and Garden's Cook Book I have in the "salad's" sections. During WWII food was rationed but there was plenty of Gelatin to go around so people had to get very very creative. One of these reminds me of a southern dish called Bologna Cake. What is that? Its Cream Cheese and layers of Bologna you wait until the bologna softens and serve it with crackers. Well needless to say its a cheep appetizer. Then there is the Tomato and Carrot Ring with dill and Basil Floating in Gelatin. And then there are Cool Whip and Gelatin Desserts Such as Orange. There's a Pineapple Cream Cheese one too but you have to make the Gelatin and Sugar first or else it won't set...

                        Actually my mother made a more palatable version of Salmon Loaf that worked when was young, except my brother hated fish. Growing up on a farm being feed traditional Maryland and Pennsylvania Dutch food my Dad liked was our salvation. I pitied the city kids after eating at their home.

                        Depression era recipes started the trend of nightmarish imagination in coming up with terrible recipes, which dominated or world through World War II up until after the sixties.
